Quick & Easy Roasted Vegetables- Delicious Every Time!
If you’re ever needing a super quick and easy vegetable to add to your meal that is still really delicious, here is my go-to method for preparing veggies. You can use this method any time you just need it to be quick and don’t want to think about it too much. Use this simple base recipe as-written, or easily add in any other additional seasonings that you like. Roasting the veggies and adding garlic powder take them to a whole new level that can not even be compared to boiling or microwaving your veggies.

As a kid we typically ate broccoli boiled, which I didn’t mind, but I didn’t really enjoy it unless there was a cheese sauce to go with it. Well now, with this method of roasting the broccoli with garlic, I can say that I absolutely LOVE broccoli! Your cooking method and preparation really do matter. I use this method for squash & potatoes too! Give it a try if you’ve never prepared them like this before, and see if your kids start to say they like broccoli (and green beans)!

If using an aluminum pan, I like to bake mine on top of compostable parchment paper to provide a barrier between the baking sheet and the food, which helps to prevent harmful chemicals from leeching into the food. If you’re using a pan with a non-stick coating, I highly recommend using parchment paper to provide a barrier, as non-stick coatings are not healthy!
If your baking sheet is scratched or damaged, it is even more likely that the non-stick coating will get into your food. One downside to using parchment paper is that I find the vegetables don’t crisp up as nicely as when you don’t use any parchment paper… so keep that in mind. I’ve recently switched to these stainless steel pans and quite like them!
Also, I like my food well-seasoned with bold flavours. If that’s not you, or if you know that you’re not a big fan of garlic, feel free to reduce the amount I’ve specified. P.S. if you like a little spice, these roasted green beans are really good with red pepper flakes added!

Equipment
- baking sheet or oven-safe dish
- parchment paper (optional)
Ingredients
- 1 large bunch/bag broccoli or green beans
- 1/2 tbsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp red pepper flakes (optional) if you like a little spice
- 1 tbsp avocado oil or coconut oil
Instructions
- Preheat oven to 425 degrees F.
- Prepare baking sheet with parchment paper (optional), then wash and chop veggies.
- Place veggies on baking sheet and add the oil and seasonings. Toss together with clean hands (or use a spatula if you prefer). Adjust seasonings if needed depending on the amount being made or your personal preference.
- Bake for 12 minutes. Taste and add more salt & pepper if desired. Enjoy!
