Quick & Easy Roasted Vegetables- Delicious Every Time!

A super simple yet delicious way to cook your veggies. This is my no-fail method that guarantees delicious vegetables using only pantry staples. Makes a perfect side for any meal!

Equipment

  • baking sheet or oven-safe dish
  • parchment paper (optional)

Ingredients

  • 1 large bunch/bag broccoli or green beans
  • 1/2 tbsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp red pepper flakes (optional) if you like a little spice
  • 1 tbsp avocado oil or coconut oil

Instructions

  • Preheat oven to 425 degrees F.
  • Prepare baking sheet with parchment paper (optional), then wash and chop veggies.
  • Place veggies on baking sheet and add the oil and seasonings. Toss together with clean hands (or use a spatula if you prefer). Adjust seasonings if needed depending on the amount being made or your personal preference.
  • Bake for 12 minutes. Taste and add more salt & pepper if desired. Enjoy!

Notes

-This method of 12 minutes at 425 F works well for almost any quick-cooking veggie. For longer-cooking vegetables such as carrots, cauliflower, onions, squash, and potatoes, they will need to cook for around 30 minutes.
-If you're not a big fan of garlic, or if you prefer your food just lightly seasoned, you may want to reduce the amount of garlic powder. But note that I wouldn't recommend adding more garlic after they are cooked because then it will be raw garlic.
